While fats are essential
for body function—including the
formation of hormones and cell
membranes, transport of fat soluble
vitamins, and other activities—it has
been well documented that diets high in
fat are not associated with optimal
health.5 However, the source
of fat in the diet may be as critical to
health as the amount of fat consumed.
While polyunsaturated fats from fish,
flax and other oils support many body
systems, intake of saturated fats from
animal sources (beef or pork) does not
have the same documented health
supportive effects.
Many followers of
low-carbohydrate diets build their daily
nutrient intake around consumption of
fried, fatty animal protein foods
(steak, hamburgers, bacon, etc). While
this may indeed lead to a loss in body
weight, it also causes a less than
optimal intake of essential fatty acids,
the “good” fats that support the heart,
immune system, brain function, and also
healthy skin and hair.† Specifically,
favoring foods high in Omega-6 and low
in Omega 3 fatty acids (such as fried
chicken) leads to an imbalance in the
ratio of Omega-6 to Omega-3 fatty acids,

Oils from cold water
fish, flax (Linum usitatissimum) seed
oil, and borage (Borago officinalis) oil
are the most nutritionally dense sources
of essential fatty acids. Intake of
these three oils provides the essential
fatty acids: docosahexaenoic acid (DHA),
eicosapentaenoic acid (EPA), gamma
linolenic acid (GLA), alpha linolenic
acid (ALA), linoleic acid, and oleic
acid resulting in an Omega-3/Omega-6
ratio of about 1:3.10-13
